Ingredients:
- 2 heaping cups of thinly sliced pineapple (approximately half a small pineapple)
- 1 tablespoon of melted vegan butter or margarine (optional)
- 2 tablespoons of maple syrup
- 1 teaspoon of cinnamon
Optional Chili Lime Dip:
- 3 tablespoons of cashew cream or vegan mayo
- 1 tablespoon of lime juice (about half a lime)
- ½ teaspoon of chili powder
Instructions:
- Peel, core, and slice the pineapple, placing approximately 2 heaping cups in a mixing bowl.
- In a small bowl, combine melted butter, maple syrup, and cinnamon; pour the mixture over the pineapple slices. Gently mix to ensure even coating.
- Arrange the slices in a single layer (slight overlap is acceptable) in the air fryer basket. Air fry at 380 degrees F for 12-15 minutes or until caramelized, flipping the pineapple halfway through.
- Enjoy the dish warm or cold, either as a dessert or a side dish.
Optional Dip:
- While the pineapple is cooking, mix the three dip ingredients in a small bowl.
Notes:
- To prevent breakage and excess liquid, spoon the pineapple slices into the fryer basket one at a time, avoiding dumping them.
- Leftovers can be stored in a sealed container in the refrigerator for 2-3 days.
