Crockpot Cowboy Soup Recipe

Cowboy Soup cooked in a Crock Pot is a straightforward and tasteful dish that’s hearty and satisfying. Packed with lean ground beef, beans, potatoes, and vegetables, this slow-cooked soup promises a filling and delightful meal that’ll warm you to the core.

Juggling both kids engaged in after-school sports, there’s nothing more satisfying than returning home post-practice to a pre-prepared dinner. And, as any parent can attest, when kids step through the door after sports activities, they arrive with voracious appetites. The sheer amount of food my boys can devour on some post-school days is truly surprising.

Enter this slow-cooker cowboy soup! Featuring abundant lean ground beef, seasoned pinto beans, and tender cubed potatoes, this robust soup is designed to satiate even the heartiest of appetites. Enhanced with well-balanced flavors of chili powder, cumin, and green chiles, it delivers a delightful Tex-Mex essence. Simply brown the ground beef and toss everything into the slow-cooker for a delectable homemade soup that will win the approval of your entire family.

INGREDIENTS:

  • 2 lbs Ground beef
  • 4 Yukon Gold Potatoes
  • 2 Cans Mixed vegetables (Undrained)
  • 1 Can Sweet corn (Undrained)
  • 1 Can Condensed tomato soup
  • 1 Can Petite diced tomatoes
  • 1 Can Cut green beans (Undrained)
  • Pinch of Salt
  • Dash of Pepper
  • 2 Tablespoons Sugar

DIRECTIONS:

  • Cut potatoes into small cubes after peeling them.
  • Brown and drain the ground beef.
  • Place the beef and potatoes in a large slow cooker.
  • Add all the cans of vegetables, the can of tomato soup, and diced tomatoes.
  • Season with salt and pepper to taste.
  • Lastly, add the secret ingredient (thanks to my grandmother Hazel) that makes this different from your typical soup: sugar.
  • Mix everything together well and cook on low for 2-3 hours in the slow cooker.

Recipe Notes:

Feel free to substitute fresh or frozen veggies, but you’ll need to add a can or two of beef stock. No need to add this if using canned veggies, as you’ll be adding the cans undrained, providing both liquid and flavor. Enjoy!
