Lasagna Soup Recipe

This simple Lasagna Soup recipe is among my preferred soups! Picture a delightful blend of beef, garlic, onion, and tomato sauce with tender lasagna noodles throughout. The ricotta cheese topping is the secret to giving this soup the authentic taste of lasagna. Mix it in for a bowlful of lasagna goodness! Plus, it’s a healthy option.

Ingredients:

  • One 4-oz mild Italian sausage link without the casing
  • 1 pound ground sirloin
  • 1 tablespoon olive oil
  • 1 cup finely chopped onion
  • 1 tablespoon minced garlic
  • 1 (32-ounce) can low-sodium chicken broth
  • 24 ounces marinara sauce
  • 8 lasagna noodles, broken into pieces
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 6 teaspoons grated Parmesan cheese

Directions:

  • Switch on a multi-functional pressure cooker (like Instant Pot) and choose the Sauté function. Add sausage and ground beef to the pot and brown them, approximately 5 minutes. Discard grease, set aside the meat.
  • Add olive oil to the pot and swirl to coat the bottom evenly. Add onion and cook until softened but not brown, about 5 minutes. Add the garlic and simmer for approximately a minute, or until fragrant.
  • Pour in chicken broth to deglaze the pot, scraping up the brown bits. Add marinara sauce, meat mixture, and season with salt and pepper. Stir to combine.
  • Add lasagna noodles, ensuring they are completely submerged in the sauce. Close and lock the lid. Choose high pressure per manufacturer’s instructions; set the timer for 3 minutes. Give the pressure 10 to 15 minutes to build.
  • Carefully release pressure using the quick-release method as per manufacturer’s instructions, about 5 minutes. Unlock and remove the lid. Taste and adjust salt, if necessary.
  • Spoon into dishes and sprinkle 1 tsp Parmesan cheese on top of each.
