Ingredients:
- 12 pieces of Mozzarella string cheese (halved)
- 2 tbsp Coconut Flour
- 1 large Egg (beaten)
- 1/2 cup Blanched Almond Flour
- 1/2 cup Crushed pork rinds
- 2 tsp Italian seasoning
- 1/2 tsp Garlic powder (optional)
- Oil for frying (optional)
Instructions:
- Line a cookie sheet with parchment paper.
- Prepare three bowls: one with coconut flour, one with beaten egg, and one with a mixture of almond flour, pork rinds, and Italian seasoning.
- Coat each mozzarella piece in coconut flour, dip in beaten egg, then roll in the almond flour mixture. Place on the lined cookie sheet without letting the pieces touch.
- Freeze the cookie sheet for at least one hour to prevent cheese leakage during baking.
Frying Instructions:
- Two tablespoons of oil are heated over medium heat in a skillet.
- Fry mozzarella sticks in a single layer for 1-2 minutes per side until golden brown and soft inside when gently pressed.
Baking Instructions:
- Preheat the oven to 400 degrees F.
- Take the cookie sheet out of the freezer and bake on the second rack from the lowest for 4-5 minutes until the bottom side is golden.
- Flip and bake for an additional 3-4 minutes until golden on the other side.
