Ingredients:

  • 12 pieces of Mozzarella string cheese (halved)
  • 2 tbsp Coconut Flour
  • 1 large Egg (beaten)
  • 1/2 cup Blanched Almond Flour
  • 1/2 cup Crushed pork rinds
  • 2 tsp Italian seasoning
  • 1/2 tsp Garlic powder (optional)
  • Oil for frying (optional)

Instructions:

  • Line a cookie sheet with parchment paper.
  • Prepare three bowls: one with coconut flour, one with beaten egg, and one with a mixture of almond flour, pork rinds, and Italian seasoning.
  • Coat each mozzarella piece in coconut flour, dip in beaten egg, then roll in the almond flour mixture. Place on the lined cookie sheet without letting the pieces touch.
  • Freeze the cookie sheet for at least one hour to prevent cheese leakage during baking.

Frying Instructions:

  • Two tablespoons of oil are heated over medium heat in a skillet.
  • Fry mozzarella sticks in a single layer for 1-2 minutes per side until golden brown and soft inside when gently pressed.

Baking Instructions:

  • Preheat the oven to 400 degrees F.
  • Take the cookie sheet out of the freezer and bake on the second rack from the lowest for 4-5 minutes until the bottom side is golden.
  • Flip and bake for an additional 3-4 minutes until golden on the other side.
