Ingredients:

  • 3 cups rolled oats
  • 1 cup protein powder (vanilla or plain flavored preferred, such as brown rice protein powder, casein protein powder, or certain whey protein blends)
  • 1 cup smooth and creamy peanut butter (alternative: almond butter or a nut-free option)
  • 1/2 cup honey (or brown rice syrup, alternative: maple syrup, though it may not bind as well)
  • 1/2 cup optional chocolate chips

Instructions:

  1. Put parchment paper inside an 8 × 8 pan and set it aside.
  2. In a large mixing bowl, combine rolled oats and protein powder, mixing well.
  3. In a microwave-safe bowl, soften peanut butter and honey in 20-second intervals until smooth and thick.
  4. Incorporate wet ingredients into dry ingredients, mixing until combined. Fold in chocolate chips if desired.
