Ingredients:
- 3 cups rolled oats
- 1 cup protein powder (vanilla or plain flavored preferred, such as brown rice protein powder, casein protein powder, or certain whey protein blends)
- 1 cup smooth and creamy peanut butter (alternative: almond butter or a nut-free option)
- 1/2 cup honey (or brown rice syrup, alternative: maple syrup, though it may not bind as well)
- 1/2 cup optional chocolate chips
Instructions:
- Put parchment paper inside an 8 × 8 pan and set it aside.
- In a large mixing bowl, combine rolled oats and protein powder, mixing well.
- In a microwave-safe bowl, soften peanut butter and honey in 20-second intervals until smooth and thick.
- Incorporate wet ingredients into dry ingredients, mixing until combined. Fold in chocolate chips if desired.
- Transfer mixture into lined pan, pressing down until smooth. Refrigerate bars for at least an hour to firm up, then slice into 16 bars.
Notes:
- If the mixture is too thick, add a few tablespoons of water to loosen it.
