Ingredients:

  • 50-60 wonton wrappers

Wonton Filling:

  • 200g (7 oz) lean pork mince (ground pork)
  • 200g (7 oz) peeled prawns/shrimp, roughly chopped
  • 1 tbsp finely grated ginger (1.5″ / 3cm piece)
  • 2 shallots/green onions, finely chopped (5 tbsp)
  • 1 tbsp light soy sauce
  • 2 tbsp Chinese cooking wine (Shaoxing wine)
  • 1/2 tsp salt
  • 2 tbsp toasted sesame oil
  • Broth (for 2 servings):
  • 3 cups (750 ml) chicken broth
  • 2 smashed garlic cloves
  • 1/3″ (1 cm) piece of ginger, sliced (optional but recommended)
  • 1.5 tbsp light soy sauce
  • 2 tsp sugar
  • 1.5 tbsp Chinese cooking wine
  • 1/4–1/2 tsp sesame oil

To Serve:

  • Finely chopped shallots/scallions
  • Quartered bok choy or Chinese broccoli (optional)
  • 40–50g (1.5–1.75 oz) dried egg noodles per person (optional)

Instructions:

Wontons:

  • Combine filling ingredients in a bowl, mashing until smooth with about 20 mashes. Maintain small prawn chunks for texture.

Wrapping:

  • Choose between “My Way” for an enhanced Wonton Soup experience or the Asian Grocery Store Way for easier freezing.
  • Lay wontons on a work surface, use 2 teaspoons to place filling on them, then fold, seal, and shape as desired. Place wrapped wontons in a container with a lid to prevent drying.

Cooking/Freezing:

  • To cook, boil a large pot of water, add wontons, and cook for 4 minutes or until they float. Transfer to serving bowls and ladle broth over them.
  • To freeze, store uncooked wontons in airtight containers. Cook from frozen for 6 to 8 minutes. Do not freeze if using defrosted frozen prawns.

Broth:

  • Combine broth ingredients in a saucepan over high heat.If there are any leftover scallions or shallots from the wonton filling, add them.
  • Simmer with the lid on for 5–10 minutes to infuse flavors. Remove garlic and ginger before using.

Assemble Soup:

  • Cook noodles if using, place in serving bowl with wontons and blanched vegetables if desired. Ladle over the broth and serve!

Recipe Notes:

Wonton Wrappers: Find them in the refrigerator section of Woolworths and Coles in Australia, usually next to fresh noodles. Two packets (40 in each) are recommended, or adjust filling for one packet.
