- 40–50g (1.5–1.75 oz) dried egg noodles per person (optional)
Instructions:
Wontons:
- Combine filling ingredients in a bowl, mashing until smooth with about 20 mashes. Maintain small prawn chunks for texture.
Wrapping:
- Choose between “My Way” for an enhanced Wonton Soup experience or the Asian Grocery Store Way for easier freezing.
- Lay wontons on a work surface, use 2 teaspoons to place filling on them, then fold, seal, and shape as desired. Place wrapped wontons in a container with a lid to prevent drying.
Cooking/Freezing:
- To cook, boil a large pot of water, add wontons, and cook for 4 minutes or until they float. Transfer to serving bowls and ladle broth over them.
- To freeze, store uncooked wontons in airtight containers. Cook from frozen for 6 to 8 minutes. Do not freeze if using defrosted frozen prawns.
Broth:
- Combine broth ingredients in a saucepan over high heat.If there are any leftover scallions or shallots from the wonton filling, add them.
- Simmer with the lid on for 5–10 minutes to infuse flavors. Remove garlic and ginger before using.
Assemble Soup:
- Cook noodles if using, place in serving bowl with wontons and blanched vegetables if desired. Ladle over the broth and serve!
Recipe Notes:
Wonton Wrappers: Find them in the refrigerator section of Woolworths and Coles in Australia, usually next to fresh noodles. Two packets (40 in each) are recommended, or adjust filling for one packet.
